Kitchen corner: Eat Healthy, On A Budget; Ugu soup

Do you know that as student on a budget you can still eat healthy and nutritious meal while
spending very less on this tight economy that we are in? Well below are the ingredients and
procedures for preparing ugu leave soup. It is really simple and easy to make with just little
effort.

Ingredients:
Pepper mix (red bell pepper, scotch bonnet and onions)
Ugu leaves (thinly cut)
Palm oil
Seasonings
Meat( in pieces)
Onions (cut)
Kpomo (cow skin)
Dried fish
Crayfish
Cooking Process:

  • Bring all your protein to cook till tender with adquate water, onion and seasonings
  • Fry your pepper mix in a heated pot with palm oil
  • Add all your protein into the pepper mix while still on heat, with a little quantity of the broth,
    we don’t want the soup watery.
  • Taste for your seasonings especially salt
  • Add your thingly cut ugu leaves and stir, cover for like five minutes
  • Viola, your ugu soup is ready!!! You can eat this with any swallow of your choice
